Instructions:

For liver with ribbon noodles, clean and cut the liver. Soak the mushrooms in 200 ml lukewarm water. Finely chop the onion and garlic.

Cook the noodles according to the instructions. Drain the mushrooms (reserving the water) and chop coarsely. Heat butter and 2 tablespoons of oil in a frying pan, sear the liver and lift out.

In the frying fat, fry the onion, garlic and the herbs briefly. Add the mushroom water and reduce by a third.

Add the liver again and season with salt, pepper and balsamic vinegar. Mix the liver and onion mixture with the ribbon noodles and serve.
