For the Spelt Wachauer Loafs, make a pre-dough with 300 g spelt flour, 400 g water, 50 g yeast and 10 g honey and let it stand for about 20 minutes in a warm place, well covered. After the pre-dough has doubled in size, add all the other ingredients and mix to form a dough. Let the dough rise for about 20 minutes and mix vigorously again.

Repeat this process once more and then weigh out pieces of dough weighing 30 grams each. Sprinkle some rye flour on the work surface and work the dough pieces round. Shape into loaves, place on a baking sheet lined with parchment paper and let proof for about 40 minutes. Then bake the spelt-wachauer loafs in the preheated oven at 220°C for about 20 – 25 minutes.

Preparation Tip:

Brush the spelt-wachauer loafs with water before baking, then they become crispier.
