Instructions:

For the banana slices, first prepare the cake. To do this, mash bananas with a fork. Mix all ingredients well with a mixer.

Spread the dough about 3 cm thick on a baking tray. Bake at 180 °C top/bottom heat for about 20 minutes. Let cool well.

For the custard cream, bring 800 ml soy milk to the boil 200 ml milk with the custard powders and the powdered sugar and mix well. As soon as the milk starts to boil, stir in the pudding powder Stirring constantly, let it thicken on low heat.

As soon as the pudding thickens, remove from the heat, stir in coconut oil and let the pudding cool well, stirring constantly. Place a springform ring around the cake base, slice bananas thinly.

Spread apricot jam thinly on the base and cover densely with banana slices. Spread custard cream on top.

Allow to set in the refrigerator for at least 3 hours.

For the chocolate glaze, melt coconut oil with chocolate, coat the cake with it and refrigerate. Loosen springform ring and decorate the banana slices as desired.
