Apple Buttermilk Pancakes

Instructions:

1. Liquefy 2 tbsp. butter, chill. Mix sugar, eggs, salt, buttermilk and liquid butter. Mix flour and baking powder and fold in. Allow dough to rise for approx. 15 min.

Remove peel from apples and cut out core. Cut apples into about 16 rings (or quarter apples, core and cut into slices). Sprinkle apples with juice of one lemon.

3. Heat 1-2 tbsp butter in batches in a non-stick frying pan. Pour 1 tbsp batter into each and top each with 1 apple ring.

Bake 16 cakes in portions for 2-3 min on each side until golden brown, keep warm. Serve warm with yogurt. Garnish with lemon and lemon balm if desired.
