Melt the butter, then cream it with the sugar, vanilla sugar and 4 egg yolks. Mix the pudding powder, baking powder and semolina, add to the mousse with the lemon zest.
Whip the egg whites to stiff peaks. Stir the low-fat curd cheese with the juice of one lemon and mix with the butter-sugar mixture. Fold the whipped cream into the curd mixture. Pour everything into a greased springform pan sprinkled with a little semolina, smooth the surface and bake for 90 minutes at 180 °C on the middle shelf.
