For the farmer’s toast, cut out the soft part of the bread from the slice of brown bread so that only the crust remains. Heat some oil in a frying pan and add the crust of the bread.
Crack an egg into the center of the bread and fry over medium heat for two minutes. Using a spatula, turn the bread and fry for another minute.
If you want the egg firm, fry on both sides for about 3 minutes over medium heat. Salt the farmer’s toast and top with the square.

If you like, you can add cheese and/or fresh herbs to the farmer's toast.
