For the asparagus soup, first chop the shallot and peel the asparagus. Briefly sauté the cut off scraps (if there are any left over from the day before) together with the shallot in the butter.

After about 3 minutes, add water until everything is covered. Add a little salt and the 1st piece of bread. Simmer for about 15 minutes and then strain all the contents, leaving only the pure asparagus broth.

Cut the good part of the asparagus, as well as the peeled potato into small pieces and add to the soup. Add just enough water to cover everything.

Then add the 2nd piece of bread and salt. Simmer again for 15 minutes. Turn off the heat and use a blender to blend everything into a creamy soup.
